Until recently when I got to test out a super-cool indoor grill from Hamilton Beach. I was cautiously optimistic about the idea at first, but it turned out I love this searing grill for all my favorite grilled recipes! (Don’t miss out – I am giving one away here)!
I have to admit, I have always been a bit timid when it comes to our large outside cooking grill. I have grilled a few times, but I am always on edge when I do! I usually let me husband do the outdoor grilling. I am too afraid I’ll burn up the house – or worse – overcook a fancy cut of steak.
I love the way food tastes when it is grilled, so I am always craving it! While I have tried other indoor grilling experiments. You know, like the ones with the two plates? This grill is not like that! It has the plate on the bottom, but an actual grill hood on the top – just like the grill you’d find outdoors!
The Hamilton Beach Searing Grill is great for anything you would typically grill outdoors and more! It will lock in the juices of a steak, the flavor of grilled kabobs, hot dogs, burgers and… In fact, I made my homemade gluten free meatballs on them – and they were delicious!
These gluten free chicken meatballs turned out so tasty on the grill. I was so impressed how the grill seared the meat on the outside, giving is a crisp crunch and keeping the inside moist and juicy. The meatballs were cooked to perfection!
Now, how about that recipe huh?
Gluten Free Chicken Meatballs
1 lb ground chicken
1 large egg – beaten
1/3 cup almond meal
1/4 cup aged Parmesan cheese – grated
1/2 tsp. onion powder
1/2 tsp. garlic salt
1/2 tsp ground anise
1 tsp. ground fennel
salt and pepper to taste
Preheat Hamilton Beach Searing Grill to 375°.
In a large bowl, beat egg and then combine all ingredients. Depending on the ground chicken, if it is really wet, you might need to strain some of the moisture. Form into small balls. Bake for 20-25 minutes, rotating halfway through.
If you want your meatballs to be crispier on the outside just broil for a minute or two after cooking.
After you are done cooking the most delicious gluten free chicken meatballs, get creative! Add them to a gluten free pasta. Make a meatball sub sandwich. Or just eat them as an appetizer. The options are endless!

I made a thick marinara to go along with my gluten free chicken meatballs. I used garden veggies – tomatoes, zucchini, squash, onion and garlic. It’s easy to make your own marinara! This sauce and the meatballs went nicely on some gluten free pasta. It was a delicious dish!
