We eat a lot of halibut in our house, thanks to my father in law and husband. They go on fishing trips to Alaska each summer (have I told you that’s how we met?). Anyway, I love that our freezer is stocked almost year round with the wild fish, caught by my manly man.
We have to come up with a lot of recipes for halibut, we aren’t getting sick of it anytime soon. One of our favorite recipes is grilled halibut with mango salsa. We typically pour it on the whole fish filet, but this time we thought “Hey this could be a great appetizer too!”
So here is the recipe for Halibut with Mango Salsa Appetizer
Halibut Bites with Mango Salsa
Ingredients
Mango Salsa
- 1 mango peeled & chopped
- 1 cup yellow orange and/or red peppers (chopped)
- 1/2 cup onion chopped
- 1 poblano pepper chopped
- 2 tablespoons fresh lime juice
- 1 jalapeno finely chopped
- 2 tablespoon cilantro
- 1/2 teaspoon salt
Halibut
- 2 4 oz. skinless halibut fillets
- 2 tablespoons of Carapelli Extra Virgin Olive Oil
- 1 tablespoon lime juice
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- salt and pepper
Instructions
For Mango Salsa
- In a medium bowl add mango, peppers, onion and jalapeno. Toss. Add lime juice, cilantro and salt. Toss and blend. Let salsa stand for at least 15 minutes, allowing the flavors to combine.
For Halibut
- Mix all halibut rub ingredients in a small bowl. Stir and massage into halibut fillets. Seriously, just massage it in. Let sit for 20-30 minutes.
- Grill seasoned fish for approx. 5 minutes per side or until fish is opaque in center. Sear the edges. Remove from heat and gently separate into bite sized individual pieces. Garnish with mango salsa. Add a toothpick and ta-da!
