I’m always searching for a good side dish to serve and I’ve also been dying to find recipes that call for quinoa, a healthy grain with a nutty, fluffy texture. This recipe is vegetarian vegan and was a hit at my house tonight. The presentation is full of color to brighten up any table! I served it with chicken apple sausage. The recipe is from my Trader Joe’s cookbook but you can find most of these ingredients at any local grocery store.
Quinoa with Grilled Vegetables and Mini-Peppers
1 (16 oz) Box Organic Quinoa
2 teaspoons olive oil or butter
6 Minisweet Bell Peppers, sliced into rings ( I used three and thought it was plenty)
1/4 cup Grilled Vegetable Bruschetta (sold in jars at Trader Joe’s)
salt and pepper
Cook quinoa according to package directions. While the grain cooks, heat the butter or olive oil in a small sauté pan, and sauté the pepper rings over medium-high heat until tender, 3-4 minutes. Set aside. When quinoa is cooked, stir in 1/4 cup Grilled Vegetable bruschetta. Top with sautéed pepper rings. season to taste with salt and pepper.
